Easy Lunches For Busy People

Do you often have to work through lunch, or are you a busy mom with very little downtime? Well, we've got a lunchtime solution for you — one-handed food that you can enjoy at your desk while typing, or while holding a small child.

Deli turkey, Peppadew peppers, whole grain crackers, and sliced cheddar

Party-sized rye bread topped with roasted red pepper strips and deli-sliced salami and provolone

Whole wheat mini-pitas, with hummus, baby carrots, and grape tomatoes 

Bite-sized mozzarella balls, black olives, whole grain crackers, and a small apple

Mini-pitas, filled with goat cheese and chutney, and a bunch of green grapes

Yogurt or ricotta drizzled with honey, topped with almonds and berries. Scoop it up with whole-grain crackers, or just use a spoon 

Also, "self-contained" food like empanadas, handpies, turnovers, or even baked ravioli or dumplings work well, too!
